Are there any resolutions out there that you guys just find to be....great?! I want more than the V-I. What do you guys have?

I'm guessing you're looking for cadences (even if not the traditional IAC, PAC, IC, Half, Plagal kind)? I'm not entirely sure how this works in theory since I've never sat down at the piece I remember it from to analyze, but imagine A major:
A-C-E-G#
A-C-E-F#
A-C#-E
So I'm thinking maybe . . . i7M to . . . oh lordy . . . vi(half-dim)65 to I? So a minor i (with the Major 7) being a borrowed chord, the second possibly some kind of off-the-wall chromatic mediant, and I.
Also, I really like a Mixolydian Authentic Cadence (v7 - I as opposed to the traditional V7 - I).

I'd have to try the v7-1. Sounds interesting already. The first chord that you mentioned, you could say it's a minor-major 7. As for the second chord, I like using chordal structures such as those. It reminds me of Eric Whitacre's pieces. He likes to insert a 4th into a major triad. It creates the "wave" effect that he is known for.
