So a minor i (with the Major 7) being a borrowed chord, the second possibly some kind of off-the-wall chromatic mediant, and I. Also, I really like a Mixolydian Authentic Cadence (v7 - I as opposed to the traditional V7 - I).

I'd have to try the v7-1. Sounds interesting already. The first chord that you mentioned, you could say it's a minor-major 7. As for the second chord, I like using chordal structures such as those. It reminds me of Eric Whitacre's pieces. He likes to insert a 4th into a major triad. It creates the "wave" effect that he is known for.
